Ever since I came across grilled polenta in one of my first grilling books I’ve been back to when it was always on my to-do list but when an idea sits untouched for years it’s so easy to put it off even longer. Yet I never forgot about it and finally gave it a try with incredibly delicious but not frustrating results.

First the frustration. I’ve never made polenta before so this was a bit of a learning curve especially the right ratio of liquid to cornmeal and how to tell when it’s done. I did some research and put together what I thought would be a perfect recipe and after a little over 30 minutes of cooking the polenta looked creamy and thick as I thought it should be. So I poured it into a couple of baking dishes and put it in the fridge where it set up quite nicely.
