Sardines are plentiful in the spring and summer and are at their most flavorful during these months. This dish combines the wonderful flavor of sardines with the natural sweetness of freshly roasted red pepper.

How to make pepper coulis | Chef Jean-Pierre

A perfect dish for the first outdoor dinner of the season. And because you can make the sauce in advance it is also very easy to prepare on the day.

Serve it as a starter or add a few extra sardines and some freshly sliced baguette and serve it as a main course for lunch.

The combination of flavours in this recipe means it can stand up to a robust white wine and I would recommend pairing it with an uncalibrated Chardonnay. For more food and wine pairing tips check out our guide.
