Charcoal is made by burning wood without oxygen and lump coal is the product of that. Since lump coal is charcoal in its most natural form it’s no wonder that purists almost always prefer it. In addition lump coal has many attractive properties; it ignites faster burns hotter and leaves very little ash behind compared to briquettes. Lumps are also more responsive to oxygen making it easier to control the temperature of the fire if your grill has adjustable air vents.
