If you’re like me you love grilling burgers during grilling season for a hungry crowd that’s counting on you to make the most of their day off. Since failure is not an option when it comes to the high stakes of backyard barbecues there are a few tips for grilling burgers that will ensure the excellence of your beef. While some of these tips are likely a rehash of knowledge that’s already been passed down there are a few specific tips for flame-grilled burgers that are worth hearing again.

I am a big proponent of home grinding: it is the best way to ensure the quality and fat-to-meat ratio of your burgers. After trying different meats I now consistently use chuck both for convenience and flavor. At the butcher you want a piece of chuck with at least 20 percent fat.

Once home take a two-step approach to grinding. First dice the chuck and push it through the grinder using the large die. Then switch to the smaller die and push it through again. This creates the right size and texture and also ensures that the fat is evenly distributed throughout the mince.
