Of all the kitchen appliances and restaurant equipment I miss using on a daily basis a French range is high on my list especially if I’m cooking multiple things on my stovetop at once. A French range has a large flat surface made of cast iron or rolled steel with a few rings in the middle. Underneath those central rings is a powerful gas burner that radiates heat to the cooking surface; as we know cast iron is a poor conductor of heat so the cooking surface is hottest in the middle and becomes less intense as you move away from the rings.

The gradual heat of a French top allows you to sauté simmer and reheat food simultaneously without having to fiddle with your burner knobs. Simply slide your pots and pans across the flat top to find the perfect cooking zone like Sohla’s famous duck zone. The large flat surface of a French top also allows you to fit far more cookware on the stovetop than you can on typical home stovetops whether gas electric or induction. These typically only allow you to place four to six pans on the stovetop’s heating elements.
