Pici is a Tuscan form of spaghetti-like pasta that is usually made with flour and water. It is probably one of the most charming shapes in the pasta kingdom. It is formed by hand and is quirkily irregular and deliberately imperfect. Three of my favorite qualities in both people and cooking. If you are intimidated by the thought of making fresh pasta this is a great shape to start with.
