We like to use one sweet and one tart apple to give the filling the perfect balance of flavours. The apples are peeled and thinly sliced and mixed with lemon juice for a bit of tartness coconut blossom sugar and cinnamon for a bit of extra sweetness and arrowroot starch to help thicken.

Next we use the same bowl to prepare the crumbly oatmeal topping.
