Healthy BBQ Chicken on the Road – Chef's Pencil

This is a tasty and quick summer dish. Roadside BBQ chicken is usually fried but I have redefined it in a healthy way for the European palate. There is a nice mixture of chili vinegar garlic and curry leaves.

In 1995 after finishing school he joined a family owned petrol station with restaurant and hotel. In 1998 he launched River Sound Restaurant at the age of 19. Passionate about food and hospitality since a very young age. Reached London in 1999 and joined Zarani Haute Cuisine Kew Garden. Promoted to Head Chef at the age of 21. In 2001 he joined Tamarind Michelin Restaurant Mayfair as Head Chef of Okra Team. In early 2002 he joined Delhi Deli as Head Chef with a vision to create a new brand of Indian takeaways that delivers fantastic food in an entertaining and stylish way. In 2003 he became the youngest Group Executive Head Chef of The Bombay Bicycle Club which was then part of Clapham House Group. In 2010 he joined as Global Head Chef (Asian Cuisine) for DO & CO International. Responsible for catering for 68 International and National Airlines Formula 1 Race Chelsea Flower show and Champion League Final. Co-Founder Director & Chef Patron at MoMo & Roti West London (Nepali restaurant with no Tandoor in the kitchen and tikka masala & korma on the menu) and Zumbura Clapham (an extension of Mum's Indian Kitchen). Culinary Director at Black Lemon Plant Base Catering along with many other projects.
