This healthy oven-roasted pork is as easy as it gets. The boneless pork tenderloin is lean and evenly shaped so it cooks evenly in the oven. Lowering the oven temperature after 30 minutes prevents the roast from drying out so don’t skip that step! Don’t have fresh herbs on hand? Use dried ones. Substitute 1 teaspoon of dried herbs for 1 tablespoon of fresh. Serve with green beans and crispy potatoes.
