My family has deep roots in Ireland and the British Isles so a shepherd’s pie on the table always feels like home. It’s real comfort in a one-pot dish with hearty meat and vegetables in the base and a crispy crown of mashed potato on top.

It is also a dish that is on the heavy side something that might require a nap after eating. So I have adapted the recipe to make it healthier but just as comforting as you would expect a meat and potato pie to be.

The shepherd’s pie I grew up with features a generous portion of meat with vegetables playing a supporting role and a thick topping of buttery mashed potato. My updated version ups the ratio of vegetables to meat and calls for extra lean ground beef which is the leanest option in the butcher’s aisle.
