A few years ago I co-hosted an event at the New York Wine & Food Festival where some of our favorite chefs cooked up their favorite soups. My favorite of the bunch: Marco Canora's endive soup.
His version consisted of delicious little chicken dumplings. However since I have a vegetarian wife and I don't eat much meat in my spare time I wanted to convert this great concept into a version that is more suitable for vegetarians.
