This recipe was originally inspired by a caprese salad! We wanted to combine the classic tomato basil cheese trio with balsamic vinegar. However we also wanted croutons in the mix (because bread!) so we ended up with an EPIC summer panzanella! The result was pretty amazing and we kept coming back for seconds (and thirds). Even tomato haters will probably fall for the classic flavors in this dish! Plus it only requires 10 ingredients and 30 minutes. Let’s do this!

Heirloom Tomato Panzanella Salad | Minimalist Bakery Recipes

Panzanella is a bread salad that is thought to have originated in Tuscany Italy. It may have been invented by farmers to use up old bread.

The earliest written recipes date back to the 14th and 16th centuries. And while these early versions were heavier on the onions tomatoes became a more central ingredient in the 1900s.

This version is a bit of a departure from the traditional and is inspired by another Italian favorite: caprese salad! A more traditional panzanella recipe can be found here.
