but for years I struggled to make quesadillas.
Every time I made them and tried to flip them, the ingredients fell into the pan and I was left with these empty quesadillas and a messy pile of ingredients in a pan.
It finally occurred to me that if I just took the tortilla, folded it in half, and stuffed it that way, it would be so much easier to flip for me. It changed my life. I don't know if anyone else feels this way, but I will never make large quesadillas again because my flipping skills are terrible.
Easy Bean Quesadillas
1/2 cup vegan refried beans
1/2 cup grated vegan cheese
5-6 street-sized tortillas
Spread about a tablespoon of refried beans on each tortilla. Top with about a tablespoon of cheese, fold over and lightly press the edges.
Fry for a few minutes on each side until golden brown
Serve with quick guacamole (mashed avocado and salsa)
Spicy vinaigrette; vegan Greek yogurt mixed with sriracha)
