Spring is just around the corner and as the days get longer and warmer I’m craving fresh flavors like crunchy peas and radishes and leafy greens like spinach and kale. To honor that I’m making dinners this week that are packed with spring veggies. They’re also high in fiber which helps me feel my best. This important nutrient helps keep my gut healthy and has other great benefits too like reducing my risk of chronic conditions like type 2 diabetes and heart disease and keeping me feeling full thanks to its ability to slow digestion.
