Guys I am so excited about this recipe that it’s about the only thing I can talk about this week. I mentioned it to a realtor who was showing us another crappy apartment (more on that if/when we make it out alive). I mentioned it to a friend who doesn’t eat sweets (and we’re still friends! It’s more like everyone else). And I tried to explain it to another friend who has probably never baked in her life who politely nodded smiled and ran out of the room. As you can see I can be incredibly boring when I get excited about cooking. That’s what you’re here for.

The 'I Want Chocolate Cake' Cake | Smitten Kitchen with Deb Perelman

I’ve been wanting to make a completely homemade all-natural chocolate waffle for years. It’s been a full-blown obsession of mine ever since Alex introduced me to the fabulousless Icebox Cake and I was disappointed to learn that the only way to make it was to buy some often-hard-to-find Nabisco chocolate waffles which come with their own set of disturbing ingredients. I knew there was a homemade recipe out there—for crazy people like me it’s not like store-bought waffles still won’t cut it when you’re looking for a shortcut—but I’ve had a hard time finding it.

Icebox cake wafers are not your average wafers they are meant to absorb the contents and look like cake. In the end the cake pieces are cut as one piece not like a stack of cookies with lightly sweetened whipped cream. They look like a decoratively assembled plate of Oreos. Am I the only one who is starting to drool over this?

So you can imagine my excitement when I discovered that I had a recipe for chocolate waffles sitting in front of me the whole time. In a cookbook I’ve had for years. From someone who seems to be just as obsessed with making the right chocolate waffle for ice cream cakes as I am. Oh and if you need an extra treat? They’re insanely easy to make by whizzing them up in a food processor and then cutting them off a chilled log. It’s like Alice Medrich knows you just want to get on with making the cake!
