If my Midwestern upbringing taught me one thing it’s that there’s nothing better than a slice of cornbread and a bowl of chili on a cold fall night. But I’m not talking about just any cornbread. I’m talking about good cornbread the kind that’s lightly crumbly perfectly golden brown and just about on the edge of savory and sweet. It’s delicious dipped in smoky spicy chili but it’s also delicious on its own with or without a pat of butter on top.

This recipe for homemade cornbread ticks all the boxes. Even Jack who doesn’t normally eat cornbread loves eating slice after slice. I’ll vote for pairing it with chili anytime but it’s fantastic with any soup or stew. Serve it with dinner along with piping hot bowls of whatever soup takes your fancy. If you’re lucky enough to have leftovers you can freeze them for another day or eat them for breakfast with a generous layer of honey or jam. Let’s get baking!
