You can’t have a bowl of ramen without alkaline wheat noodles. You can buy high-quality noodles from noodle manufacturers like Sun Noodle but you can also make excellent noodles yourself as long as you use a few key but common ingredients: high-protein bread flour vital wheat gluten and baked baking soda.

These noodles are intended for use in shoyu ramen and miso tori paitan and are best paired with relatively light broths although they can be used with almost any ramen recipe. This recipe makes four servings of noodles and is based on the following formula for one serving of noodles (the recipe can be adjusted to your liking using this formula):
