Figs have two short harvest seasons each year one in early summer and one in the fall so it’s tempting to stock up which means you might end up with more figs than you know what to do with. A great way to use up figs (and enjoy them when they’re not in season) is to pickle them.
This old-fashioned fig preserve recipe has just 3 ingredients: fig sugar and lemon. Figs have a natural honey-like sweetness so lemon adds a tangy acidity and brightness. The ripe fruit is slow-cooked with a generous amount of sugar and a few lemon slices resulting in a delicious spread that’s perfect on a cookie or as part of a cheese board.
