Here’s a delicious roast chicken recipe that uses one of my all-time favorite poultry techniques… spatchcocking! This cooking method allows the chicken to lie flat as it roasts so everything cooks evenly and the breast meat comes out just as juicy and tender as the dark meat. The honey mustard marinade adds incredible flavor and works overtime as a sweet and tangy sauce to brush on and serve. Serve with roasted potatoes and Brussels sprouts if desired.
