You can change the iPhone 15 screen timeout by doing the following:
1. Open Settings.
2. Select Display & Brightness.
3. Choose Auto Lock.
4. Tap an option.
Note that if your phone has a security profile or is managed by a school or company, you may not have the "Never" option.
