How to clean strawberries (so they last longer)!
As a young pastry chef every summer was a fruit-filled dream that quickly became a nightmare. Faced with an abundance of ripe summer fruit I was constantly racing against the clock to wash and process the berries before they spoiled. It was a stressful task that involved a lot of cleanup. We filled multiple sinks with cold tap water so that we could fully submerge the fruit and rinse it to free it of dirt. We then placed the berries on regular-sized baking sheets lined with parchment paper or paper towels to dry. We repeated the process until every piece of fruit was clean dried and stored. Needless to say any excitement I felt for that first juicy strawberry quickly disappeared as I was drowning in an endless deluge of produce.

Even though I no longer work in restaurants I still face the same dilemma every summer. When I get home from the farmers market with my weekly harvest of fruit I continue to wash dry and refrigerate my berries as quickly as possible. (What can I say? Old habits die hard. I have a deep-seated fear that every minute a berry spends unwashed outside the fridge is one closer to moldy demise.)
