Few people know that the fruits of the nopales cactus (cacti with beavertail-like paddles) are actually quite edible. Also called prickly pears these neon fruits produce a delicious juice that tastes like a cross between natural chewing gum (if such a thing exists) and watermelon.
Prickly pear juice is often used to make jam or candy but it also works wonders in cocktails and in salad vinaigrettes.
