Even if you have the very best chef’s knife and that knife has been carefully honed and sharpened after every use chicken can still be a little slippery to cut. As with bacon or pancetta or really any other meat throwing it on a plate and putting it in the freezer for about 15 minutes will help firm it up and make it easier to slice accurately.
All muscle mass has a grain. The muscle fibers align in the direction they contract. The orientation of your knife along this grain determines the length of the muscle fibers in an individual slice of meat which in turn has a profound effect on how tender or tough that meat is.
