This is the time of year that I dry herbs. Partly because in spring and late summer I often come across unusual unusual varieties – caraway thyme pineapple sage fresh coriander. Some appear for a week or two and then are not seen again for a year. Sometimes it’s the herb flowers that get me – I like to use them all year round and the only way to guarantee a supply is to dry them. It couldn’t be easier so I thought I’d share my method for those of you who may have missed it the last time I wrote about it.
