Another way to preserve yellow squash!

It’s easy to grow more zucchini and summer squash than you can eat and even friends and neighbors can get tired of zucchini bread. Luckily zucchini and other summer squash are among the easiest vegetables to dry in a dehydrator and dried zucchini and squash stay tasty and fresh in recipes all year long. To use your summer harvest in the dead of winter simply rehydrate your squash and add it to pureed soups stews and other dishes.

The dehydration process takes about a day. Most of the process requires no active effort on your part. For those using an oven stay home to keep an eye on the pumpkin and wait to remove it at the right time. For those using a dehydrator feel free to just set it up and move on to your next project.

Blanching your squash before drying is a great way to preserve color and texture. Blanching is the simple process of boiling the squash whole for about a minute and then immediately submerging the hot vegetable in extremely cold water. Note that blanching is an optional step and will not affect the flavor of the squash. For those planning on pureeing the squash for soup for example color and texture are unimportant.
