If I had to sum up the culinary reality of Jamaica or any other Caribbean island in one sentence I would say this: it is a kaleidoscopic synthesis of colonial enslaved indigenous and diaspora culinary traditions as bold and eclectic as the culinary traditions of Singapore or Sicily.

We have a bewildering variety of starches; we have street food that requires careful research into the correct ratio of crumb to meat to sauce to spices; and we have a completely secret vegan diet called “ital” courtesy of the Rastafarian movement.

And yet aside from a few breakout stars like Christmas black cake and jerk chicken Caribbean cuisine has largely been sidelined even as Mexican Indian Chinese and other cuisines have pushed aside French dominance to assert themselves in the North American culinary imagination. Well this Jamaican thinks it’s high time the overlooked cuisines of the Western Hemisphere stepped up and asserted themselves. (In Patois: A fi we turn now!)
