Spring is when the earth awakens from its long winter sleep and fills farmers’ market stalls with the first harvests of peas garlic stalks and in some places wild garlic. With their jewel-like bulbs and delicate leaves wild garlic looks a bit like baby leeks and has a garlicky oniony flavour rounded off with a hint of sweetness. Sadly these popular vegetables have been destroyed.
Quebec offers a cautionary tale: In 1995 Quebec made it illegal to sell wild garlic as authorities sought to curb overharvesting which had led to the province listing it as an endangered species. Still demand for wild garlic was so high that a lucrative black market developed. Despite concerns about the sustainability of the wild garlic crop the wild allium’s popularity has only grown with interest peaking each spring.
