In my years as a restaurant cook I would cut a piece of masking tape and hang it above my workstation at the start of each shift then mark a notch with my marker every time I finished a container of ice water. I forced myself to keep track of my water intake during a busy shift where self-care wasn’t a priority despite the sweltering heat in the kitchen. If I had a few scraps of lemon or lime or a few bruised berries I’d throw them into my ice-water-filled deli counter in an attempt to make my water more appealing but it was hardly a thoughtful approach to creating a flavored drink.
