Fried cheese or queso frito is a Latin American delicacy best known as a Mexican treat which is perfect as an appetizer afternoon snack or even for breakfast. It is not only eaten in Mexico but is also popular in many Spanish-speaking countries in the Americas including Colombia the Dominican Republic Nicaragua and Puerto Rico.
Not just any cheese will do: you want a cheese that is slightly spongy and somewhat crumbly with a high melting point. Most cheeses will simply melt in the oil and make a big mess. The type of cheese you want to look for is literally called “fried cheese” or queso para frier. It is a fresh-tasting cheese that does not melt when exposed to high heat. You can also use queso asadero (grilled cheese) or other Mexican cheeses or halloumi a Greek cheese.
