I’ve made vegan mayo a hundred different ways. That being said I’ve found a recipe that I really like – especially this time of year. You can substitute it directly for traditional mayo in your favorite potato salads macaroni salads. Or spread it on your favorite sandwiches. One of the mayo-like versions is that this version is probably more aioli-like compared to commercial clear white mayo. Either way it makes everything you throw at it taste better than if you scoop it out of a jar. Promise.
