Liz loves this super simple recipe for fluffy sugar cookies because it’s done in one bowl and doesn’t require any special equipment. To get the best possible texture in your cookies make sure all of the ingredients are at room temperature including the butter and eggs. Beat the butter and sugar until light and fluffy to ensure your cookies bake up nice and fluffy then add the eggs one at a time until evenly combined. Sift your dry ingredients directly into the bowl it saves you time and washing up! Finally try not to over-mix the batter or your cookies will end up tough and rubbery; stop beating when there’s still some flour on the side of the bowl and fold it in by hand with a rubber spatula. Use an ice cream scoop to create perfectly smooth cookies. A quick trip in the oven and you’ll have buttery soft sugar cookies but they wouldn’t be complete without a buttercream garnish.
