If you want to melt Velveeta cheese and avoid burning it try using a bain-marie. This handy piece of hardware can perfectly melt delicate fabrics like Velveeta without burning it because it avoids direct heat. Here’s how it works.

A bain marie consists of two separate parts: a large pan on the bottom and a smaller one that is stacked on top. To use it simply fill the large pan with water and bring it to a simmer. Then add your favorite ingredient to the smaller pan to melt. (You don’t need to bring the water to a boil as the heat from the simmering water is enough.) As the water simmers steam will rise from the large pan and heat the smaller pan gently melting the substance inside. Because of the constant convection in the bottom pan from the constant flow of steam there will be no hot spots in the top pan so there will be no burning. Instead your Velveeta will gradually melt into a soft sensational cheese just as it should be.

While this device may seem intimidating at first it’s actually very easy to use so even beginners can try this heating method with confidence. For anyone who doesn’t have a bain marie in the kitchen you can always buy a kit online or in-store. (Or you could just grab a second bowl for your KitchenAid.)
