How to pre-boil potatoes

Parboiling is a method of partially cooking food in boiling water. When a recipe calls for parboiling it refers to partially cooking an ingredient until it is tender but not yet cooked through. Parboiling differs from blanching in that you rinse the food under cold water after parboiling to prevent it from cooking then continue cooking it when other ingredients are ready or you are storing it for later use. Blanching on the other hand does not require a cold rinse or bath.

Parboiling potatoes make it easier to get crispy edges with fully cooked fluffy interiors than if you were to start with raw potatoes. Parboiling also rinses away some of the simple sugars in a potato which results in a golden crust instead of a dark brown.
