I confess: I don’t rinse my rice when I’m in a hurry or a bit lazy which I’m sure my mother hates. But the old saying “mothers know best” is absolutely true: every time I skip rinsing I regret it. Rinsed rice always makes for better-cooked rice. Plus it’s not difficult or time-consuming: the extra two to three minutes it takes makes all the difference.
When rice is processed and shipped the grains rub against each other creating a dusty powder. This powder is essentially starchy rice flour. If you don’t rinse it it hydrates and cooks creating a sticky gummy texture. If you’ve ever had a mass of mushy sticky rice it’s probably because the rice wasn’t rinsed properly.
