As someone who wrote a cookbook about salads and is a vegetable lover I can confidently wax poetic about it: vegetables are my thing. However most people assume that’s why I only buy fresh produce preferably from a cute farmers market with a cute but practical bag on my arm. Well I shop weekly at my local market and am a big fan but my freezer is also full of frozen veggies.

Not only did I grow up with frozen vegetables but when I studied nutrition in college (I’m also a Registered Dietitian) I was taught that vegetables are flash-frozen at the peak of ripeness meaning they retain just as many nutrients as their fresh counterparts. I’ve never forgotten this and ever since I’ve kept bags of frozen broccoli peas artichokes and more on hand to grab when my crisper drawers are empty.
