The USB sideload method of updating, or even downgrading/rolling back your software, can be used either to test new features and/or fixes, or to mitigate existing issues with an up-to-date software update. At the time of making this video, the M0210 public OTA was released to the public and has since fixed MANY of the lingering issues from the previous OTA update. It's not perfect, and that's why today we're loading the latest M0414 beta software, which is supposed to fix remaining or newly created issues from M0210.
The last thing I want to mention in this description is: NO, I cannot share this beta software with you, and if you purchase it through the appropriate channels, you SHOULD NOT share it either.
