To make planks simply cut off the pointy end of your pineapple and slice down the sides leaving the core intact. You only need about an inch thick for your planks so you can use the leftover pineapple flesh to make salsa.

Now prepare the fish. Salmon is one of the best fish to grill but you can also use snapper or bass. Whichever you choose mix some soy sauce and honey or some teriyaki and spices and brush the fleshy side of the pineapple plank before placing the fish on top. Pour the remaining sauce over the fish season to taste and place on a medium grill and cover. Cook for about 20 minutes or so until the fish flakes easily with a fork. Serve with some pineapple salsa and enjoy.
