Summer vegetables don’t need much to shine. Just brush the dirt off a sun-ripened tomato and you’re ready to enjoy. Fall and winter vegetables like carrots broccoli cauliflower and hearty squash need a little more work before they’re ready for prime time and one of the best ways to do that is by roasting them.
Roasting vegetables brings out their natural sweetness and intensifies their flavors transforming them into something luxurious and lovable. Everyone has their own approach to roasting vegetables so I spoke to three chefs to learn how to do it right and they all said the same thing: Roasting at 425°F is the way to go.
