About eight years ago I gave up meat except for some seafood (I’m a pescatarian with a shellfish allergy basically). I had a few reasons for giving it up and none of them were that I didn’t like it. Chicken beef pork and (sometimes) veal were at the heart of many of my favorite dishes and happiest memories. Given that I relied on meat for most of my meals the thought of going without was daunting.
