There’s something about croquettes that just feels fancy. Maybe it’s their golden color or the knowledge of how much work goes into making them. And it’s that second reason that often keeps me from stuffing and baking them myself giving Trader Joe’s Papas Rellenas a total score that I’m stocking up on.
Inspired by the Peruvian classic the recently released frozen find simply means “stuffed potatoes.” It features a filling of ground beef mixed with onion garlic and diced red and green peppers. The savory meat filling is reminiscent of the Mexican picadillo I ate as a kid right down to the rich tomato base and peppery oregano.
