It’s clear that Ina Garten loves chicken as much as we do. From recipes like her Creamy Chicken Thighs with Lemon and Thyme to her life-changing cooking tips the Barefoot Contessa continues to give us all the tools we need to succeed with this beloved protein. In her most recent Instagram video Garten took the time to answer a question everyone’s been talking about: “How do you make chicken that isn’t dry?”

Garten begins the video with her pulling two large skin-on chicken breasts out of the oven…but they're not cooked through. "First I undercook them a little bit" she says. "If you overcook chicken it gets really dry." So Garten holds the meat on the baking sheet covers it with aluminum foil and lets it rest outside the oven for about 10 minutes. She ends the video by saying "You won't believe the difference it makes."
