How the pandemic changed Ina Garten's idea of a 'go-to' dinner

If you're looking to spice up your usual vegetable-roasting routine we've tracked down some expert advice from one of EatingWell's favorite celebrity chefs Ina Garten. Here are five tips from the Food Network star on how to roast vegetables to perfection including slicing tips recommended seasonings and ways to avoid limp soggy veggies.

When you’re cutting your veggies to add to your baking sheet it’s okay to keep the chopped pieces large (especially with produce that’s packed in water) and in some cases Garten says it’s better. In her recipe for Roasted Summer Vegetables she notes that cutting zucchini into ¾-inch-thick slices “will look big but they’ll shrink as they cook.”

Think twice before dumping a pile of overlapping vegetables onto your baking sheet. In recipes like her Roasted Broccolini & Cheddar and Roasted Carrots Garten recommends keeping your vegetables in a single layer with no overlap.
