For years my friends and I have hosted semi-regular “supper club” get-togethers which are essentially fancy themed potlucks. We take turns choosing a cookbook or chef to inspire our menu and each person contributes a dish or two to create a truly spectacular multi-course meal from cocktails to dessert. Over the years we’ve cooked dishes by Yotam Ottolenghi Alison Roman and Melissa Clark to name a few. And during the height of the pandemic when we were all quarantined we switched to creating what I now look back on as one of my most memorable friendship memories by each making four family-sized portions of a dish that we then traded with each other to make our Christmas dinner side dishes. We bundled up in winter gear we gathered outside and swapped our dishes while sipping fancy hot chocolate. It was the first time we’d seen each other in person in almost a year. Although we couldn't celebrate the holidays in a supper club manner our families still shared a meal together while we were alone.
