Mediterranean Diet 101 | The Authentic Mediterranean Diet

As EatingWell’s Associate Editorial Director Carolyn Malcoun looks for cool farm chefs and other food stories to tell. She holds a bachelor’s degree in journalism from the University of Wisconsin and a degree in culinary arts from the New England Culinary Institute. Hi I'm Carolyn Malcoun EatingWell's deputy editor filling in for Maria this week to share a meal plan using recipes from our latest column Imposibly Easy One-Pot Meals You'll Want to Make Forever. All of the recipes are so easy you won't even need a knife or cutting board. In development we made sure a well-stocked grocery store had all of the ingredients in the recipes already on hand (like shaved Brussels sprouts and garlic pasta). And as a working parent who makes dinner almost every night I'm here for the ease of making these dishes! When choosing this week's meal plan I opted for dishes that fit the Mediterranean diet. My husband has nonalcoholic fatty liver disease and my cholesterol is a bit elevated so our healthcare provider recommended that we both follow them. Because this eating pattern focuses on eating lots of vegetables whole grains healthy fats and lean proteins without cutting anything out entirely it's a sustainable eating pattern for us to follow. Let's get started!
