Rendang is a dish that originated hundreds of years ago in the Minangkabau Highlands of Indonesia. The rich and deep preparations are thick stews filled with herbs and bursting with flavor.

Traditionally made with beef rendang chicken and even lamb or goat can be used instead. It is one of Indonesia's most beloved dishes that has traveled to surrounding areas and been integrated into other cuisines.

The equally delicious Thai version honors the original Indonesian cooking methods but adds its own classic curry ingredients. In Indonesia it is not considered a curry but more of a stew. The Thai version is also very thick. Rendang is considered a “dry” curry meaning that the sauce is kept to a minimum. Because it is so condensed the sauce sticks to the meat making this dish incredibly flavorful. It is not normally a very spicy dish but the level of spiciness can be adjusted to your taste with more or less red chili peppers.
