I'm whipping up this incredibly fragrant and spicy Indian spiced simmering sauce this morning in preparation for a recipe I'll be posting tomorrow (a Chickpea Cauliflower Korma). This tomato-based ginger-slammed garam masala-enhanced simmering sauce is a variation on Coco Morante's version in The Essential Instant Pot Cookbook and I suspect it's going to become a go-to sauce for many of you. The recipe makes about six cups of sauce—perfect to use some to refrigerate some to freeze. And don't worry if you don't have an Instant Pot I suspect a stovetop or even a slow cooker version of it would be just as awesome. I'm using this simmering sauce as the base for the korma but I've also used it on a cauliflower pizza crust this week along with a sprinkle of chickpeas and a bit of paneer for Indian spiced pizza (quick lunch) and I'm going to use it on a garlicky whole wheat crust for dinner tonight. It’s great as a sandwich spread a dipping sauce for grilled broccoli or for chana masala. Overall it’s simply delicious and you’ll have no trouble coming up with clever ways to use it up. If you make some today I promise you won’t regret having it on hand to quickly tackle the recipe tomorrow. Think of it as a homework assignment! 😉
