Years ago when Instant Pots (not literally) became a huge thing on the home food scene my mom jumped on the bandwagon and bought my brother and me one each for Christmas. I remember unpacking the big box (probably hoping it was the expensive winter coat I so desperately wanted) and feeling a little disappointed. As a food snob I loved the ritual and slowness of cooking and the Instant Pot seemed like the opposite in name alone.
