Stop me if you've heard this before: it's bad to cook with hot water from the tap. Many home cooks myself and other contributors to The Spruce Eats have spent years of our lives cooking with this kitchen wisdom in mind.

The reason you don’t use hot water to cook may vary depending on where you grew up or who taught you to cook. Somewhere along my journey from culinary school to restaurant I was told that hot tap water can taste funny and affect the taste of your meal. Others avoid it because lead is more likely to leach into water when it’s hot. Or maybe you’re one of those people who doesn’t really know why you shouldn’t cook with hot water. (“The chemicals?” one of my coworkers guessed when we discussed it.)

A strange-tasting soup is one thing but a potentially dangerous dinner is another. With such high stakes it’s essential to get the facts. So is it really unsafe to drink or cook with hot tap water? After talking to drinking water experts I learned that the answer is yes. It is unsafe to drink hot tap water.
