The classic Italian sub is one of my favorite sandwiches but a good one is enormous and could probably use some restraint when adapting it into grilled cheese form! It’s a rare day that I can present a grilled cheese sandwich as a lighter option but that’s definitely the case with these Italian grilled cheeses.
Also Italian subs are SO big that my kids get overwhelmed by them. So by cutting down the layers a bit and making it a gooey crispy grilled cheese you get the best of both worlds.
