This easy 3-ingredient Italian lemon ice cream is childhood in a paper cup

My great-grandfather was a lemon farmer in southern Italy. Lemons are in our blood. As a child lemon Italian ice was a favorite dessert. I loved the little yellow cups with wooden spoons that were always offered on our local ice cream truck. When I was sick with a sore throat my mother would bring home a whole box. Although I love lemon Italian ice I didn’t think to make a batch at home until I was feeling a little sick myself.
Luckily this is a really easy recipe to make so if you’re like me and have a nasty cold and sore throat you won’t have to be sick for long. All you need is some sugar water a whole bunch of lemons and some lemon extract. When the mixture comes out of the ice cream maker it has a slushy texture kind of like what I imagine Philadelphia-style water ice to be (I’m putting making it into actual ice cream on my priority list). When I tasted the freshly made ice cream my husband exclaimed that it was “like frozen lemonade.”
